The “South” Dog

So the other night my husband and I were at a friend’s house and we had hot dogs. They put on their hot dogs coleslaw, pickled okra and pimento cheese. I thought – Wow, that sounds different, but good! And guess what, it was so yummy. Well I was craving one the other night and I realized that I didn’t have any hot dogs, but I did have mango jalapeno chicken sausages. In stead of the hot dog I used a mango jalapeno chicken sausage and wow!!!! It took it to a whole new level. They were so yummy. What’s for dinner tonight? Beef Stew!

Ingredients 2 pounds stew beef 2 tablespoons vegetable oil 2 cups beef stock  1 tablespoon Worcestershire sauce 1 clove garlic, peeled or 2 teaspoons of minced garlic  1 medium onion, sliced 1 teaspoon salt 1 teaspoon sugar 1/2 teaspoon pepper 1/2 teaspoon paprika Dash ground allspice or ground cloves 3 large carrots, sliced 2 tablespoons cornstarch Brown meat in hot oil. Add water, Worcestershire sauce, garlic, onion, salt, sugar, pepper, paprika, and allspice. Cover and simmer 1 1/2 hours.  Add carrots and cover and cook 30 to 40 minutes longer. To thicken gravy, remove 2 cups hot liquid. Using a separate bowl, combine 1/4 cup water and cornstarch until smooth. Mix with a little hot liquid and return mixture to pot. Scallops and Bacon Pasta

Ingredients 4-6 slices bacon 1 1/2 tablespoons olive oil 12 large scallops (wash and pat dry) 1/2 cup dry white wine 3 tablespoons sun-dried tomatoes thinly sliced 1/4 cup heavy cream 2 tablespoons butter (room temperature) 2 teaspoons minced garlic 1 (8 ounce) package angel hair pasta (can use whole wheat pasta) salt and black pepper to taste Directions Place the bacon in a large skillet and cook over medium-high heat. Turn occasionally until evenly browned, about 10 minutes. Drain the bacon. Chop the bacon. Set aside. Bring a large pot of lightly salted water to a boil for the pasta. 3 Bean Salad

Ingredients 1 pound string beans (trimmed and cut into 1-inch pieces) 1 (10-ounce) bag frozen shelled edamame 3 tablespoons oil 3 tablespoons rice wine vinegar 1/4 cup fruit apricot preserves (100% is the best)  1 tablespoon sugar 1 teaspoon freshly grated ginger 1 (15-ounce) can black beans (rinsed and drained) 2 scallions, sliced Salt Directions Put the string beans and frozen edamame into a steamer basket and steam them for 4 minutes. Then put the beans to a large bowl and put them into the refrigerator to cool for 15 minutes. In a small bowl mix together oil, vinegar, apricot preserves, sugar and ginger. Add the black beans and scallions to the other beans that you placed in the refrigerator, drizzle with dressing, and toss to coat. Season with salt, to taste. Healthy Complete Salmon Dinner

Makes: 4 servings Start to finish: 20 minutes Ingredients 1 tablespoon sugar 1 teaspoon salt 1 teaspoon ground cumin 1 teaspoon ground chili powder 2 medium sweet potatoes, scrubbed Nonstick olive-oil cooking spray 4 skinless salmon fillets (5-6 ounces each) 1 tablespoon olive oil 2 tablespoons fresh cilantro sprigs Directions 1. Preheat broiler. In a small bowl, combine sugar, salt, cumin, and chili powder. Cut sweet potatoes into 1/4-inch-thick slices and place on the greased rack of a broiler pan. Yummy Breakfast Casserole

INGREDIENTS 2 - Frozen buttermilk biscuits 2 - Eggs 1/3 cup – Milk 1/4 tsp – Ground mustard 1 cup – Frozen potatoes (O’Brien with onions and peppers from 28-oz bag) 1/2 cup – Diced ham or sausage (sausage adds more spice!) 1/2 cup – Shredded Cheddar cheese (2 oz)   DIRECTIONS 1. Place frozen biscuits on microwavable plate. Microwave uncovered on Medium (50%) 30 to 40 seconds or until soft. 2. Heat oven to 350°F. In medium bowl, beat eggs, milk and mustard with wire whisk until blended. Stir in potatoes, ham or sausage and cheese. 3. Spray 1-quart casserole with cooking spray. Easy Lasagna

Ingredients 1 pound ground beef 1 (26 ounce) jar Ragu® Old World Style® Pasta Sauce 1 (15 ounce) container ricotta cheese 2 cups shredded mozzarella cheese 1/2 cup grated Parmesan cheese, divided 2 eggs 12 lasagna noodles, cooked and drained Directions Preheat oven to 375 degrees. Brown ground beef in 12-inch skillet; drain. (Remember to brown the beef – It adds more flavor!) Stir in pasta sauce and heat through. Spaghetti and Shrimp with a Pinot Grigio Sauce

Ingredients 1 pound spaghetti pasta 1/4 cup olive oil 3 shallots, chopped 3 cloves garlic, minced 3/4 cup chopped sun-dried tomatoes 1 1/2 cup Pinot Grigio (or other white wine) 1 pound shrimp, peeled and deveined 1 teaspoon salt 1 teaspoon freshly ground black pepper 2 cups spinach Directions Bring a large pot of salted water to a boil over high heat.
