2/3 c. cocoa

1/8 tsp. salt

3 c. sugar

1 ½ c. milk

¼ c. butter

1 tsp. vanilla


Combine cocoa, sugar and salt in large saucepan-3 quart size. Add milk gradually and mix thoroughly. Bring to a bubbly boil on high heat, stirring constantly. Reduce heat to medium and continue to boil till it reaches a temperature of 232º. Cook till it forms a soft ball in a glass of cold water. Thermometer should not be on the bottom of the pan. Remove from heat and add vanilla and soft butter. Don’t stir till it reaches 110º. Beat by hand till it thickens and losses some of it’s gloss. Quickly pour into buttered pan (8” x 8” x 2”). Cool and then cut into squares.
