1 (1 lb.2.5oz.) pkg. pudding included white cake mix

1 c. strong coffee, room temperature

4 egg whites

4 (1.4 oz.) toffee candy bars, very finely chopped (Skor)


2/3 c. sugar

1/3 c. choc. syrup

1/2 (8oz.) pkg. cream cheese, (4 oz.) softened

2 c. whipping cream

2 tsp. vanilla

1 c. strong coffee, room temperature


chopped toffee candy bars or choc. curls, if desired

Heat oven to 350 degrees. Grease and flour 2-9” or 8” round cake pans. In large bowl, combine cake mix, 1 c. coffee, and the egg whites at low speed till moist then for 2 min. at med. speed. Fold in chopped toffee bars (or Skor). Spread batter in greased and floured pans. Bake at 350, 9” for 20-30 min. or 8” for 30-40 min. or until toothpick inserted in center come out clean. Cool 10 min., remove from pans. Cool completely.

In med. bowl, combine sugar, choc. syrup and cream cheese. Beat until smooth. Add whipping cream and vanilla and beat until it’s fluffy. Refrigerate until ready to use.

To assemble cake, slice each layer in half horizontally to make 4 layers. Drizzle each cut side w/1/4 c. coffee. Place 1 layer coffee side up on serving plate, spread w/3/4 c. frosting. Repeat w/second and third cake layers. Top w/ remaining cake layer. Frost sides and top of cake w/remaining frosting. Garnish w/chopped toffee bars or choc. curls. Store in refrigerator.
